Mediterranean Chicken with Orzo

Serves 4
A deliciously easy one pan dinner.
Ingredients:
1 1/2 cup whole wheat orzo |
2 tablespoons olive oil |
1 lb chicken breasts, sliced thin and tenderized |
1/2 tablespoon minced garlic |
1/4 cup white wine |
1 package grape tomatoes, halved, 10 oz. |
1 cup spinach, chopped |
1/4 cup pine nuts |
1/2 cup kalamata olives, pitted and sliced small |
1 tablespoon chopped fresh parsley |
1 tablespoon chopped fresh basil |
1/2 teaspoon oregano |
1/2 teaspoon ground black pepper |
1/2 cup crumbled feta |
Directions:
- Bring a small pan of water to a boil. Cook orzo according to the package directions.
- Pour 1 tablespoons olive oil into a skillet and bring to medium heat.
- Add the chicken and cook for 5-7 minutes on per side. Transfer the chicken to a plate.
- Pour the remaining olive oil into the skillet. Add garlic and cook over medium heat for 1 minute. Add the white wine and grape tomatoes. Cook and stir for 5-10 minutes, until grape tomatoes are soft, and the wine begins to reduce.
- Add the cooked orzo, spinach, pine nuts, kalamata olives, parsley, basil, oregano, and black pepper. Stir together until combined.
- Transfer serving plates. Place the chicken on top and sprinkle on the crumbled feta. Enjoy!
