Mediterranean Pasta Salad

Serves 4

Take your taste buds to the Mediterranean.

Ingredients:

2 cups spiral pasta, cooked
1 can ripe olives, pitted, drained and chopped
4 plum tomatoes, rinsed, dried and chopped
2 tablespoons capers, drained
4 tablespoons Greek vinaigrette
1 clove garlic, peeled and minced
1 tablespoon fresh parsley, minced
1/2 cup feta cheese, crumbled

Directions:

  1. In a bowl, combine pasta, olives, tomatoes and capers.
  2. In a separate bowl, whisk together the vinaigrette, garlic and parsley; drizzle over salad and toss to coat.
  3. Sprinkle with feta cheese and serve immediately.
