Serves 6
A Southern spicy dish that packs the heat.
Ingredients:
1 tablespoon vegetable oil |
1 yellow onion, chopped |
2 tablespoons cayenne pepper |
1 tablespoon dried thyme leaves |
2 bay leaves |
6 green onions, chopped |
1 can tomatoes, undrained, 15 oz. |
1 cup chopped celery |
3 oz tomato paste |
1 green bell pepper, thinly sliced |
3 lb shrimp, peeled |
2 cloves garlic, chopped |
Cooked rice, for serving |
Directions:
- Heat oil in a heavy skillet. Once hot, add onions, celery, bell pepper, garlic, thyme, cayenne pepper and bay leaves. Saute for about 5 minutes, until vegetables are tender.
- Add tomatoes and tomato paste to skillet and simmer for 15 minutes.
- Add shrimp, simmer for 10 minutes.
- Serve over hot rice.
