Light and Crispy Catfish Fillets

Serves 4

An incredibly simple recipe to make delectable breaded catfish.

Ingredients:

4 Catfish fillets
Salt, to taste
Ground black pepper, to taste
1/3 cup yellow cornmeal
1 tablespoon paprika
Vegetable cooking spray

Directions:

  1. Sprinkle catfish fillets evenly with salt and pepper.
  2. In a shallow dish, combine yellow cornmeal and paprika. Dredge fillets in cornmeal mixture; coat lightly with vegetable cooking spray.
  3. Cook catfish in a hot, nonstick skillet over medium heat for 3 to 4 minutes per side or until fish flakes easily when tested with a fork and is opaque and fully cooked throughout.
