Mediterranean Quesadillas
Serves 3 quesadillas
Ingredients:
1 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1/3 cup diced red onion
1 cup chopped spinach
1 tomato, diced
Canola oil, for frying
3 burrito-size tortillas
Directions:
