Sweet Chili Coconut-Lime Chicken with Coconut-Lime Cauliflower Rice





Serves 4
Super easy and super scrumptious!
Ingredients:
| 1 cup light coconut milk |
| 1/2 cup sweet chili sauce |
| 2 tablespoons lime juice |
| 4 chicken breasts |
| 1 1/2 tablespoons coconut oil |
| 8 cups cauliflower rice |
| Salt, to taste |
| Ground black pepper, to taste |
| 1/4 cup fresh cilantro, chopped |
Directions:
- Pour 1/2 cup of coconut milk, the sweet chili sauce and 1 tablespoon of lime juice in a resealable container. Stir to combine. Add the chicken breasts and toss to coat. Seal shut and place in the refrigerator to marinate for 1 hour.
- Bring a large pan to medium heat. Place the chicken in to cook for 4-5 minutes per side.
- In a separate pan, melt the coconut oil over medium heat. Then add cauliflower rice and season with salt and pepper. Saute for 5-7 minutes, until the cauliflower rice is tender. Pour in the remaining lime juice and coconut milk. Add the chopped cilantro and stir to combine.
- Spoon the cauliflower rice onto serving plates. Lay the chicken breasts on the rice. Enjoy!
