Chocolate Covered Strawberry Truffles

Ingredients:
1 cup freeze dried strawberries
1/2 cup blanched slivered almonds
1 cup shredded coconut
1 teaspoon honey
4 oz dark chocolate
Directions:
Combine the strawberries, almonds, coconut and honey in food processor. Pulse until a fine powder, stopping to scrape the sides occasionally.
Scoop out about 1 rounded teaspoon of the mixture and form into a ball.
Place the balls on a plate. Place into the freezer to chill for 15 minutes.
Remove from the freezer. Set aside. Line a baking sheet with parchment paper.
Melt the dark chocolate in a saucepan over low heat, stirring frequently.
Once melted, turn off the heat. Use tongs to dip the truffle balls into the melted chocolate. Place the dipped balls on the parchment-lined baking sheet. Let sit for the chocolate to set.
