Pour a small amount of cooking oil into a saucepan and bring to high heat. Once hot, add jasmine rice and saute 1 minute.
Add coconut milk and broth to the pan. Season with salt and pepper and bring to a boil. Turn down heat to low, cover with a lid and let simmer 20 minutes.
Turn the heat off and keep the lid on and cook for an additional 10 minutes.
Fluff the rice with a fork and spoon onto serving plates.

Sweet Coconut Rice

1 can coconut milk, 13.5 oz.
1 cup jasmine rice
1 cup vegetable broth
Salt, to taste
