Roasted Red Potatoes with Garlic and Rosemary

Serves 6

The perfect potato side dish.

Ingredients:

3 cloves garlic, finely minced
7 red potatoes, skin on and quartered
3 tablespoons extra virgin olive oil
2 teaspoons dried rosemary
1/2 teaspoon salt
1 teaspoon ground black pepper

Directions:

  1. Preheat oven to 350° F. Line a baking sheet with aluminum foil.
  2. Place potatoes in a mixing bowl. Drizzle olive oil over potatoes, and sprinkle with salt, pepper, garlic and rosemary and toss in bowl until evenly coated.
  3. Transfer seasoned potatoes to a baking sheet.
  4. Place the baking sheet in the oven and roast for 30-35 minutes.
