Grilled Thai Shrimp
Serves 24
Ingredients:
1/3 cup light coconut milk
1/4 cup sweetened coconut, flaked
1 1/2 teaspoon red curry paste
1 tablespoon fish sauce
24 shrimp, peeled and deveined
Directions:
In a medium bowl, stir coconut milk, coconut, red curry paste and fish sauce together.
Add shrimp to bowl, stir, and chill for 1 hour.
Prepare grill for medium-high heat. Place shrimp on grill rack and cook 2 minutes per side or until done.
Skewer each shrimp onto a decorative toothpick before serving.
