Chai Spiced Molasses Cookies

Ingredients:
3 cups flour
1/2 teaspoon salt
1/4 teaspoon allspice
2 teaspoons baking soda
2 teaspoons ground ginger
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
2/3 cup packed brown sugar, light or dark
1 cup unsalted butter, softened
2/3 cup sugar
1 large egg
1/3 cup molasses
2 teaspoons vanilla extract
For the Spiced Sugar Coating:
1/2 cup sugar
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
Directions:
Stir together the flour, salt, allspice, baking soda, ground ginger, ground cloves, and ground cinnamon in a large mixing bowl. Set aside.
Place the brown sugar, butter, and sugar in a separate large mixing bowl. Beat with a hand mixer until fluffy. Add the egg, molasses, and vanilla extract. Beat until fully combined. Slowly add the flour mixture to the brown sugar mixture. Beat until fully combined.
Wrap the top of the bowl with plastic wrap. Place in the refrigerator to chill for at least 1 hour.
Preheat your oven to 350°F. Line a large baking sheet with parchment paper.
In a small bowl, whisk together sugar, ground cinnamon, and ground ginger. Sprinkle on a working surface to coat the cookies.
Scoop out portions of the chilled cookie dough. Roll them into balls. Then roll in the spiced sugar until fully coated. Arrange them on the baking sheet. Gently press down to flatten.
Place in the oven to bake for 9-12 minutes, until tops begin to crack. Remove from the oven. Let cool for 10 minutes, then transfer to a wire rack to cool fully.
