Baked Cashew Cauliflower

A delectable vegetarian alternative.
Ingredients:
For the Cauliflower: |
1 whole cauliflower, washed and cut into florets |
1/2 cup cornstarch |
1 teaspoon olive oil |
For the Sauce: |
1/2 cup water |
1 teaspoon cornstarch |
1/4 cup ketchup |
1/4 cup soy sauce |
2 tablespoons brown sugar |
2 cloves garlic, minced |
1 teaspoon grated fresh ginger |
1/4 teaspoon dried red chili flakes |
1/4 teaspoon black pepper |
1 cup unsalted roasted cashews |
Directions:
- Preheat oven to 350° F. Grease a shallow baking dish with the olive oil. Set aside.
- Place the cauliflower in a mixing bowl and pour in the cornstarch. Toss to coat. Shake off any excess cornstarch and transfer the cauliflower to the baking dish.
- Place the dish into the oven and bake for 10 minutes. Remove from oven and set aside.
- Whisk together the water and cornstarch in a mixing bowl until the cornstarch is fully dissolved. Then add the ketchup, soy sauce, brown sugar, garlic, ginger, red chili flakes and black pepper. Whisk together until incorporated.
- Pour the sauce over the cauliflower and gently stir to coat in the sauce.
- Return the cauliflower to the oven and bake for 5 minutes. Remove from the oven.
- Sprinkle the cashews over the cauliflower and gently stir. Return the cauliflower to the oven and bake for an additional 15 minutes.
- Remove the baking dish from the oven. Spoon the cashew cauliflower onto serving plates and enjoy!
