Chicken Chimichangas

Serves 6
Irresistibly delicious.
Ingredients:
8 oz cream cheese |
1 1/2 tablespoons taco seasoning |
8 oz shredded pepper jack cheese |
2 chicken breasts, cooked and shredded |
6 flour tortillas, 14-inch |
Prepared queso, for topping |
Taco sauce, for topping |
Sour cream, for topping |
Directions:
- Preheat oven to 350° F. Grease a large baking sheet with cooking spray.
- Stir together the cream cheese, taco seasoning and pepper jack cheese in a large mixing bowl. Add the chicken and stir together until well combined.
- Spoon an even amount into the center of each flour tortilla.
- Tuck in sides and roll up each similar to a burrito.
- Lay them seam side down on the baking sheet. Spray tops of tortillas with cooking spray.
- Place into the oven to bake for 15 min.
- Flip chimichangas and bake for an additional 15-20 minutes, until the top is golden brown.
- Remove from the oven and transfer to serving plates. Top chimichangas with queso, taco sauce and sour cream. Enjoy!
