Cherry Balsamic Glazed Chicken





Serves 4
A restaurant-quality meal in 30 minutes.
Ingredients:
| 4 boneless, skinless chicken breasts |
| Salt, to taste |
| Black pepper, to taste |
| 1/2 teaspoon dried thyme |
| 2 cloves garlic, finely minced |
| 1 cup cherries, pitted, halved |
| 1/4 cup balsamic vinegar |
| 2 tablespoons honey |
Directions:
- Generously season both sides of the chicken breasts with salt and black pepper. Then sprinkle with the dried thyme. Set aside.
- Add the garlic, cherries, balsamic vinegar, and honey to a medium saucepan. Bring to medium heat. Cook for 8-10 minutes, stirring occasionally, until the cherries soften. Remove from heat.
- Bring a heavy skillet to medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6 minutes. Flip and cook for 4 minutes, then brush the cherry balsamic glaze generously onto the chicken. Cook for 3 minutes, undisturbed.
- Remove the skillet from the heat. Allow to rest for 3 minutes.
- Transfer the chicken to serving plates. Spoon any remaining glaze over the chicken. Enjoy!
